To offer a better understanding of different topics and a more personalised learning experience, the EGCI workshops are structured into three main educational modules.
Creative Gastronomy with Top Chefs
These creative workshops are led by renowned Croatian and international chefs and focus on presenting their culinary philosophy, techniques and personal interpretation of local ingredients. The emphasis is on modern approaches, innovative techniques, flavour harmony and visual presentation.
Some of the chefs who have led workshops in this module include: Danijel Đekić, David Skoko, Robert Perić, Janez Bratovž, Emanuele Scarello, Deni Srdoč, Jeffrey Vella, Luka Košir, Ante Udovičić and many others.
Gastronomic Valorisation of Local Products
This module focuses on one selected local product per workshop. The programme combines a short expert or producer presentation about the product and its origin, followed by a chef-led cooking workshop where the ingredient is interpreted in several creative dishes.
This module also includes workshops on full use of ingredients (nose-to-tail / zero waste approach). Topics covered so far include: Boškarin beef, Istrian donkey, saffron, truffles, prosciutto, cheeses and fish.
Cooking Techniques and Food Preparation
This module focuses on culinary techniques and methods that help improve workflow, enhance flavours and develop new dish concepts. Workshops explore both classic and modern techniques, with a strong practical focus.
Some past topics include: sous-vide cooking, braising, grilling, baking, healthy frying and similar techniques.
