Through a guided farm visit, an educational presentation and a hands-on cooking workshop, you will learn about local breeds, their conservation, and enjoy dishes that celebrate true Istrian gastronomy.

PROGRAM:
- Meeting Point: Gortanov Brijeg 1, Pazin – in front of the Educational Gastronomic Center of Istria (EGCI).
- Guided Visit to Boškarin Farm: Visit the "In Vivo Gene Bank of Istrian Cattle," a specialized farm dedicated to breeding and selecting Boškarin cattle. Participants will learn about the history, cultural significance, and conservation efforts associated with this indigenous breed.
- Educational Presentation at EGCI: An informative session highlighting AZRRI projects focused on preserving and promoting indigenous breeds such as the Boškarin cattle, Istrian donkey, goats, and sheep. Learn about their vital roles in maintaining biodiversity, sustainable pasture management, and how their products form the basis of Istrian gastronomy.
- Interactive Culinary Workshop: Led by an experienced chef, guests will witness the preparation of traditional Istrian dishes across four delicious courses: cold appetizer, warm appetizer, main course, and dessert. Emphasis is placed on fresh, seasonal, and locally-sourced ingredients, featuring meat from indigenous Istrian breeds. The experience includes tasting 2 dl of Istrian Malvasia and 1 dl of Istrian Teran, along with natural mineral water.
- Special Offer: Guided wine pairing experience in collaboration with renowned local winemakers. (Price upon request)

Ingredients for the "From Farm to Table" tour are provided by AZRRI. Due to the seasonal nature of ingredients used, a specific menu cannot be guaranteed in advance. However, upon request, arrangements can be made to accommodate participant preferences, dietary restrictions, or religious requirements.
