The workshop brings together two generations and two completely different perspectives on the same ingredient. Franko Milotić, a culinary instructor and long-time expert in traditional Istrian cuisine, brings extensive experience, knowledge of time-honoured recipes, and a deep understanding of local ingredients, which he has been sharing with chefs, traditional taverns, and agritourism establishments throughout Istria for many years. Matija Bogdan, chef at the 7 Seas restaurant in Njivice, recipient of the Gault&Millau “Great Chef of Tomorrow” award in 2021, and a creator of modern Mediterranean cuisine with a strong local identity, will interpret the same ingredient through contemporary techniques, precision, and a creative fine dining approach.
The workshop will focus on Istrian kid goat, presented through two culinary philosophies: from a traditional dish that respects authentic flavours and techniques to a modern interpretation demonstrating just how elegant, contemporary, and gastronomically exciting this ingredient can be. The workshop is also part of a broader initiative to preserve the indigenous Istrian goat breed, highlighting how the appreciation and promotion of its meat, milk, and other products can create new economic value and ensure the breed's long-term future.
Comparing these two approaches will help participants recognise what defines the character of a traditional dish and where opportunities for their own creative interpretations arise. Direct interaction with both mentors will provide valuable inspiration for developing menus in which the local origin of ingredients becomes a genuine competitive advantage.
